SUPPER in a JIFFY

Most of us in the SOUTH call our evening meal SUPPER…and there’s nothing so delicious & filling as a bowl of homemade VEGETABLE SOUP and some good ole’ southern CORNBREAD or CORN MUFFINS.  And one of the easiest & quickest ways of stirring up some muffins is….

                                         JIFFY  MIX

All you need are three ingredients: 

the mix, one egg, and 1/3 cup milk.  In about 20 minutes you have some southern-baked yumminess...


Every few weeks I make a big ole’ pot of what I call my DUMP SOUP ‘cause I just “dump” everything in and freeze it in individual containers.  Then it can be easily thawed when wanted.


There’s nothing like a hot meal cooked up in a “jiffy” on a cold winter night…and like that old coffee commercial used to say:

             “It’s good to the last drop”….and crumb!

  1. Oh, I could use that bowl of yumminess today..it's "blustery" as Winnie the Pooh would say...hmmm, I think that rhymes. Now I have a taste for homemade veggie soup. I did make homemade ham and bean soup last week..but alas, it's gone. Oh well, looks like you had a tastey supper! My hubby like his cornbread with maple syrup on it. Me, just hand over the muffin and butter!

  3. Yep...I like it too with chili!! Yum! Here's another wonderful recipe...take that jiffy corn bread mix...add 1/2 stick melted butter, 1 cup sour cream and 1 can corn, creamy or corn or both. (I have done it all...just added whatever I have...it always turns out well) Bake 1/2 hr at 350*....and yum! Corn bread cassarole! A great side dish!

  5. I love that you used little throw away dessert plates for the cornbread..lol we do that to.
    Do you ever spice up the cornbread?
    What do you put in the soup..it looks yummy.

    That looks delicious! I love good cornbread and soup. I made some Mexican cornbread last week - I had mine with turnip greens.

  9. We're really bad and add a couple of tablespoons of sugar to the mix :-0 - it comes out just a little sweet and it's awesome!

    I used to make that kind of soup, but haven't for years! I forgot all about it, I'll have to try that one again! Nothing like soup simmering for supper on these cold winter evenings!

    I WILL STAND UP AND TESTIFY FOR JIFFY CORNBREAD....OH MY...MY VERY FAVORITE CORNBREAD MADE UP AS MUFFINS....DO YOU KNOW ABOUT THE SECRET OF ADDING A YELLOW CAKE MIX TO JIFFY MIX AND YOU WILL HAVE CORNBREAD THAT IS HIGH, FLUFFY, AND I WOULD RATHER HAVE OVER ANY CAKE IN THE WORLD. I FOUND OUT THE SECRET FROM A RESTUARANT WE USE TO EAT AT ON SUNDAYS.

    That soup looks great and I love cornbread muffins!
    My Mom always made those and we called it supper too even though I was in Illinois growing up.
    My hubby grew up in Wisconsin and he has always called it dinner.

  14. That last pic just made me laugh out loud, you are so funny.

    I'm staying with my daughter and granddaughter right now. My grand just loves it, she says there's always cornbread, greens and a pot of beans around when grandma's here.

  15. We make soup out of all our frozen leftovers and call it garbage can soup. It can be some to the tastiest soup ever. Yours looked yummy!
